When did your roastery start? 

I started roasting since 2017 on a Bullet R11kg roastery, i earned my SCA roasting certificate on 2019.

How did you learn to roast coffee? 

I started by reading articles and practicing on the pan, then ending up purchasing my machine later.

And what drew you to roasting as a profession?

When I was exploring the specialty coffee community, I found that roasting is very close to what I do (oil and gas processing). Where parameters, monitoring, data analysis and maintaining specs is very important and that is my interest and passion! As soon as I started putting my hand on the roast machine and profiling a data log and using analysis to experiment with different profiles, the passion grew much bigger due to potential of knowledge and learning.

What do you love most about the coffee roasting industry?

The community, endless knowledge in coffee chemistry, there is alway potential to learn and to explore

In your opinion, is roasting more science or more art?

To me it is both, with a little knowledge on coffee and using the art of parameter control, this is what makes it very interesting 

Was there a particular cup of coffee that changed the way you think about coffee?

Yes, a cup of v60 from Yemen Coffee beans it was very complex with a bright fruity flavour 

What is your focus as a roastery? Wholesale to cafes? Do you roast just for your own cafe? Sell online? 

All of the above! Currently I roast from my own cafe and a couple of others and I am aiming for online retail soon.

May you please tell us a bit about your team? Who makes the wheels turn in your operation?

My Partner is Salim, he is always pushing for better results in the cup! The main drivers of my business are my customers.

With all the different processing methods now available to roasters, is there a processing method that you enjoy working with? And why?

Fermented coffee are a bit tricky in roasting however the most interesting ones are natural coffees which to me require extra caution during development and total roast time. 

How have you seen coffee culture in your region grow over the last few years? 

It has been growing very fast in the region however I feel it is a little bit slower in Oman compared to other GCC brothers.

Where are you located and can people come visit you?

We are in Muscat! Sure everybody is welcome to Click and soon we will be ready to welcome people to our roastery as well.

What makes your roastery stand out in a booming industry?

Consistency. We roast each coffee for the best result , I won't lie, it is challenging however the beauty of speciality coffee is endless! And everybody has a chance to provide different coffee through the roasting process!
