"How are you doing for time? Do you have 9 minutes?"

We popped in at Junipa's on our recent trip up to Joburg and we did have nine minutes (while I waited for the croissants to come out the oven, yes please!). This is what happened:

And nine minutes later, the beans are bathed in a quick shower of water (a surprising amount of water actually!) to cool them down ready for the resting period.
