Handsome No More!?

We missed the boat! Handsome Coffee Roasters shall soon be no more.

The uber cool moustachioed L.A. roastery of our dreams has just been taken over by a bigger competitive roastery, Blue Bottle Coffee Company. What a way to open your first store in a new city, take out the competition! You've got to give the team at Blue Bottle props. Michael Phillips, one of the founders of Handsome wrote for us on how to get the best out of your French Press and we desperately wanted to get to his spot

"Phillips of Handsome Coffee explained that he and his two partners, Tyler Wells and Chris Owens, had a wonderful three years growing the company. But by joining Blue Bottle, said Phillips, “our roaster and barista team will become part of a larger family that has the resources and the ambition to do great and exciting things. ... As a single shop-roaster operation, it would have taken a lot of money and time to provide more opportunity for our staff.” Their 18 or so employees will join a company with 240."

But on the plus side, Blue Bottle seems to be a pretty cool establishment.

"A slightly disaffected freelance musician and coffee lunatic, weary of the grande eggnog latte and the double skim pumpkin-pie macchiato, decided to open a roaster for people who were clamoring for the actual taste of freshly roasted coffee. Using a miniscule six-pound batch roaster, he made an historic vow: “I will only sell coffee less than 48 hours out of the roaster to my customers, so they may enjoy coffee at its peak of flavor. I will only use the finest, most delicious and responsibly sourced beans.” In honor of Kolshitsky’s heroics, he named his business Blue Bottle Coffee, and began another chapter in the history of superlative coffee."

If you want to find out the history by the name, check it out here. This is the guy at the helm:

Well, Blue Bottle, you're officially on the list. Be seeing you.
